Why Sustainable Seafood Is at the Heart of Everything We Do
When we set out to build Makai — Jacksonville FL's chef-driven Hawaiian poke and musubi restaurant — one of our non-negotiables was this: we would only serve seafood that we could stand behind.
Sustainable seafood practices include responsible harvest limits, gear methods that minimize bycatch, farm-raised aquaculture that doesn't deplete wild stocks, and full chain-of-custody traceability from ocean to table.
Makai means "toward the sea" in Hawaiian. We take that seriously — as a responsibility, not just a brand identity. Every bowl of poke we serve is a small vote for a healthier ocean future.
